This lamb is produced by Ben Machin of Tamarack Vermont Sheep Farm in Corinth Vermont. Their flock dates back to the 1920s and has been raised by his family. Ben raises these animals on grass and as naturally has possible. We have been looking for a quality lamb producer for some time and we are pleased to partner with Ben and his heirloom flock.
We have had them cut in half so they are not too big, and these 2-3 pound pieces should feed 4-6 people. Use your favorite marinade and put these either in the oven or grill. Always best to have a meat thermometer around and take them off the heat just before they are done as they will continue to cook for a few minutes after.
Keep refrigerated and cook within a week or freeze.
