Savage is made from the von Trapp's organic unpasteurized cows milk and is a bold, nutty and sweet flavored hard Alpine Cheese.
Named for Samuel S. Savage, who settled the von Trapp farm in the 1700's, this Alpine style cheese is a hard-cooked and pressed cheese which is aged for 8 to 12 months.
The von Trapp Farmstead was started 50 years ago when Erika von Trapp came to the US from Austria to settle in Waitsfield Vermont. Sebastian is her grandson and continues in the family tradition of farming and preserving the working landscapes of Vermont.
Made with Organic Raw Milk
While raw milk is used for this cheese, the cooking and aging process of cheese making substitutes for pasturization.
Enjoy this fine cheese on it's own, with crackers or some sweet dried fruit or jam. Allow to come to room temperature before serving for fullest flavor.
Store in the refrigerator.
