The lightly-aged style is meant to showcase the Scholten's Farm distinctive Dutch Belt milk. To learn her craft, Patty studied at the Vermont Institute of Artisan Cheese followed by a dedicated period of development, where she and Roger were able to draw upon the expertise of Vermont's rich artisan cheese community.
Patty and Roger Scholten manage a small herd of Dutch Belt cows in the rolling landscape of Weybridge, VT. Organic production and top quality helps them compete in the milk trade, but adding value to the milk on the farm with their newly constructed cheese house has created new opportunities for the family business.
