Oven Roasted Sweet Potato Fries

  • 4 sweet potatoes
  • oil
  • salt, to taste
  • cayenne pepper or chili pepper (optional)
  • cinnamon (optional)

  • salt, peppers, cinnamon
Instructions
  1. Preheat oven to 400 degrees.
  2. Peel sweet potatoes.
  3. Cut into strips to a size of your liking. (Keep in mind that the thicker the piece of potato, the longer it will need to roast.)
  4. Toss potatoes with a bit of oil and sprinkle with salt and/or other seasonings.

  • 3 pounds +/- celeriac, peeled and cubed
  • 6 cups stock (vegetable or chicken) or half stock and half water
  • ½ cup of half and half cream (optional)
  • salt and pepper, to taste

  • olive oil, butter, salt and pepper
Instructions
  1. Remove root ends and green tops from leeks.

  1. Cut off the dark green tops of the leek a couple of inches above the white bottom.

Instructions
  1. Wash, core and coarsely chop tomatoes.

  • sea salt and black pepper
  • 1 pomegranate (you can substitute other fresh berries or fruit like red currants)
  • 1 teaspoon za’atar (Middle Eastern spice blend available at many coops and markets)
  • 1 cup buttermilk
  • ½ cup plain yogurt (whole or Greek)
  • tablespoon olive oil
  • 1 garlic clove, crushed or pressed
  • salt, to taste
