Mixed Grain Muesli

We don’t talk much about breakfast. “What are we having for dinner?” is forever stealing the spotlight. Farmers to You offers numerous scrumptious breakfast foods (don’t get me started on that Salumi Slab Bacon!).  If you don’t have time to stir a pot of oatmeal in the morning try making muesli.  Muesli is the invention of a Swiss doctor looking to fortify his patients.  In its simplest form muesli is a mixture of raw oats and milk.  There are zillions of variations, all good.

Snack Food – Chewy Granola Bars

Snack Food...Chewy Granola Bars Print Author: Shannon Hepburn Ingredients

  • 1 cup rolled oats
  • 1 cup rye flakes
  • 2 tablespoons flax meal plus enough whole wheat flour to make ½ cup total
  • 1 cup walnuts
  • ½ cup dried figs
  • ½ cup golden raisins or Tierra Farms raisins
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • ⅓ cup maple syrup or agave nectar
  • 2 eggs (larger rather than smaller)
  • 1 - 2 tablespoons water
Instructions
  1. Preheat oven to 350 and grease a 9x13 baking pan with butter or oil.

Hearty Muesli

Muesli Print Author: adapted from Saveur Muesli is pretty much the same deal as granola, but the grains are soaked overnight (usually in milk, cream or yogurt with a squeeze of lemon) allowing for easier digestion. As with any granola recipe add what you like and omit what you don't. Ingredients

Holiday Pumpkin and Cinnamon Granola

  • 4 cups rye flakes
  • 3 cups rolled oats
  • ⅓ cup sunflower oil (or butter if you're feeling decadent)
  • ⅓ cup maple syrup
  • zest of one large orange
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup raw almonds
  • ½ cup walnuts
  • ½ cup shelled pistachios
  • 1 cup raw pumpkin seeds (pepitas)
  • 1 cup dried cranberries
  • OPTIONAL
  • 1 cup puffed brown rice
  • 1 cup puffed millet
  • I like to add 1 cup of Crunchy Flax cereal (made by Enjoy Life) - they are little unsweetened balls that give a satisfying crunch to the granola
Instructions
  1. Preheat oven to 350 degrees F.

Basic Rye and Coconut Granola

  1. Preheat oven to 300. Line a rimmed baking sheet with parchment paper (or leave it uncovered if you don't mind scrubbing the pan later).
