Curried Rice Salad

  • 2 – 3 cups cooked brown rice
  • 1 lb steamed or roasted zucchini

  • ⅓ cup raisins (or apricots or currants)
  • sunflower oil

  • hot pepper flakes
  • cilantro
  • ½ cup chopped salted and roasted cashews

Fresh Homemade Raita


  Fresh Homemade Raita Print Cool and refreshing, raita is wonderful as a side dish, a dipping sauce for bread and vegetables or a dressing. An excellent accompaniment to grilled meat. Ingredients Ingredients
  • 1 cup whole organic yogurt
  • ½ cup cucumber, grated
  • 2 tablespoons cilantro, chopped (or mint)
  • 1 tablespoon finely chopped onion
  • ¼ tsp ground cumin
  • salt and pepper, to taste
  • 1 garlic clove, pressed (optional) -- see note below
  • 1 tablespoon olive oil (optional) -- see note below
  • 1 – 2 tablespoons lemon juice (optional) -- see note below

Tomato, Goat Cheese and Walla Walla Onion Bruschetta


Here’s my idea of fast food.  This meal comes together in under 2 minutes – the time it takes to toast your baguette slices.  I’ve purposely left the bruschetta topping simple so that the splendid flavor of summer ripe tomatoes may shine.  As much as I love basil, I was looking for a more delicate bite.  If you’re not keen on raw onions, by all means, leave them out.  The tomato and goat cheese combo alone is completely satisfying. French Potato Salad

French Potato Salad

IMG_0799This is the potato salad I grew up eating. My mom always made this and I never tired of it. The recipe comes from Julia Child’s Mastering the Art of French Cooking. I’ve adapted it slightly by omitting the wine and adding more scallions, but otherwise this is all Julia. French Potato Salad Print Serves: 6-8 Slightly adapted from Julia Ingredients

  • 2 lbs. gold potatoes (about 8 to 10 medium potatoes)
  • 4 tablespoons white wine vinegar
  • 2 teaspoons dijon mustard
  • ½ teaspoon salt
  • 12 tablespoons olive or sunflower oil
  • 1 bunch scallions, chopped (white and green parts)
  1. Peel the potatoes, and cut in half or into quarters if large.
