Granor’s Thanksgiving Stuffing

stuffing Granor's Thanksgiving Stuffing Print Serves: 12 cups Our family’s traditional Thanksgiving stuffing. It’s a lot of chopping but I can’t imagine the holiday without it! Ingredients

  • 1 Red Hen Stuffing Mix or 1 pound crusty bread, cubed
  • 1 pound pork sausage
  • 4 – 6 garlic cloves (or more)
  • 2 teaspoons hot peppers
  • 2 large onions, diced
  • 7 celery ribs, chopped
  • 1 ½ pounds carrots, diced
  • 1 green pepper, diced (optional)
  • ¾ pound crimini mushrooms, chopped (optional)
  • 2 cups chestnuts (optional)
Farmers To You Ingredients:
  • bread/stuffing mix, pork sausage, garlic, onion, carrots
Other Fresh and Pantry Ingredients:
  • celery, hot pepper, green pepper (optional), mushrooms (optional), chestnuts (optional)
Instructions
  1. Wash all vegetables.

  • 1 cup medium roast coffee beans
  • 1 pound carrots, thinly sliced
  • 1 tablespoon of oil
  • 1 garlic clove, minced
  • course salt and pepper

  • coffee beans, carrots, oil, garlic
Other Fresh and Pantry Ingredients:
  • salt and pepper
Instructions
  1. Wash carrots and cut into thin strips.

Carrot Soup

  • 4 tablespoons butter
  • 1 tablespoon oil
  • 1 onion, medium to large
  • 1 ½ pounds carrots, chopped
  • 3 cloves garlic, minced or pressed
  • 2 tablespoons fresh ginger, grated or chocked
  • 6 cups vegetable or chicken stock or water
  • 1 cup white wine
  • teaspoon +/-curry powder or cumin
  • 1 – 2 tablespoons lemon juice
  • salt and pepper, to taste
Farmers To You Ingredients:
  • onions, carrots, garlic, ginger, stock, oil
Other Fresh and Pantry Ingredients:
  • butter, wine, curry/cumin, lemon juice, salt and pepper
Instructions
  1. Place oil and butter in heavy soup pot positioned over medium heat.

Creamy Celeriac Soup

One of the great things about this and other soups is that it is easy to customize with the addition of other ingredients. Uncomplicated and good tasting. Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 leeks, trimmed
  • 2 garlic cloves
  • 3 pounds +/- celeriac, peeled and cubed
  • 6 cups stock (vegetable or chicken) or half stock and half water
  • ½ cup of half and half cream (optional)
  • salt and pepper, to taste
Farmers To You Ingredients: Fresh and Other Pantry Ingredients:
  • olive oil, butter, salt and pepper
Instructions
  1. Remove root ends and green tops from leeks.

Homemade Chicken Stock

This is a basic version that you can tweak to your liking by using more or less of whatever you have on hand. Freezes well. Ingredients

  • 8 cups (half gallon) water
  • bones and bits from one large chicken or 2 small ones
  • 4 large carrots
  • 2 large onions, peeled and quartered
  • 4 – 5 large ribs of celery, with leaves
  • 4 garlic cloves
  • 2 bay leaves
  • large handful of herbs: thyme, basil, parsley, oregano
  • 1 tablespoon soy sauce
  • 1 tablespoon black peppercorns
Farmers To You Ingredients: Other Fresh and Pantry Ingredients:
  • bay leaves, soy sauce, black peppercorns
Instructions
  1. Save all the bones, scraps and pan drippings from your next roasted chicken.
