  • 2 cups of sugar
  • 3 large eggs at room temperature
  • 1⅓ cup vegetable oil
  • 1 teaspoon of pure vanilla extract
  • 2 cups all purpose flour plus a bit more to flour pans
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 ¼ teaspoons salt
  • 1 pound of carrots, grated
  • 1 cup walnuts or pecans, chopped plus an additional third cup for decoration
  • 1 cup raisins or currants
  • cream cheese frosting (see recipe)
  • ⅓ cup crystallized ginger for decoration

  • granulated sugar, vegetable oil, vanilla, baking soda, cinnamon, salt, crystallized ginger
Instructions
  1. Preheat oven to 400 degrees.

On my sixteenth birthday, my best friend, Suzanne, presented me with a large and impressively heavy box wrapped in the Sunday comics and tied with string.  Upon opening it I discovered it contained rich, dark soil.  This was in the days before bags of compost were readily available (in fact, I’d never heard of compost).  I dumped the earth into a pot and grew a tomato with somewhat successful results.  My first real garden wasn’t for another 8 years.  It was 1981 and I had just moved to Vermont from the west coast.

  • 2 apples, peeled, cored and thinly sliced (use any fruit or berries)
  • 8 Tbsp butter
  • 1 cup granulated sugar
  • 1 tsp cinnamon
  • 3 eggs
  • 1 cup of half & half (or cream, milk, or a combination)
  • 1 tsp vanilla extract
  • ⅔ cup flour
  • ½ tsp salt
  • powdered sugar to sift over top before serving
