  • 1 pound gold potatoes
  • 1 large shallot and/or small onion
  • 1 large handful of spinach or other greens, ripped into pieces
  • 5 eggs
  • ¼ - ½ cup grated cheese of choice (cheddar or Alpha Tolman)
  • salt and pepper, to taste

  1. Bring a small soup pot full of water to a boil.

  • ⅓ cup all purpose flour
  • 1 ½ cups half and half cream
  • ½ pound cheddar, grated (also good with Swiss or Parmesan or other hard cheeses)
  • 1 tablepoon fresh thyme
  • salt and pepper, to taste
  • 1 teaspoon paprika

  • salt, pepper, paprika
Instructions
  1. Preheat oven to 350 degrees.

  • 1 loaf of bread (fresh or stale), cut or torn into bite sized pieces
  • 2 – 3 cups fresh cherry tomatoes, coarsely chopped
  • ⅓ cup+ Greek peperoncini, chopped
  • 1 large handful fresh basil leaves
  • 8 ounces of queso fresco or mozzarella, torn into pieces
  • 2 medium garlic cloves, pressed
  • ½ cup good olive oil
  • ¼ cup balsamic vinegar
  • salt and pepper, to taste
  • arugula
  • grilled sausage (optional)

  • peperoncini, olive oil, balsamic vinegar, salt and pepper
Instructions
  1. Tear or chop bread into bite-sized pieces.

Swiss Chard au Gratin Swiss Chard Au Gratin Print Serves: 4 Loved even by children who declare “I hate chard!”, this combines the soft freshness of the cooked greens with the salty, garlicy crunch of homemade bread crumbs. Ingredients

  • 2 bunches of Swiss Chard (you can substitute spinach or kale)
  • ½ cup +/- butter
  • olive oil
  • 1 large onion
  • ½ cup dry white wine (or stock of choice)
  • 1 cup milk
  • 3 tablespoons flour
  • salt and pepper, to taste
  • large pinch of nutmeg
  • 2 cups cubed bread (I used the Red Hen Seeded Baguette)
  • 1 large garlic clove
  • ½ cup grated cheese (von Trapp’s Savage Organic or other hard cheese)
Farmers to You Ingredients: swiss chard, Savage cheese, Red Hen Seeded baguette, milk
Fresh and Other Pantry Ingredients: butter, olive oil, onion, wine, flour, salt, pepper, nutmeg, garlic
Instructions
  1. Preheat oven to 350 degrees and butter/oil a 9 x 9 baking dish or pie pan
  2. Wash chard and remove stems and center spines.

When you live in a small town, holidays take on a particular flavor. On Independence Day in Maple Corner, the 5 minute parade is so short it has to go by twice, sometimes with the viewers trading places with the performers on the second run-through so that everyone has a chance to be both a spectator and a participant. There’s the usual array of kids all dressed up and riding bikes. And then there’s the well-loved “Mrs. Appleyard’s Memorial Precision Rolling Pin Drill Team” who toss their pins in unison as they walk the dirt road from the general store to the pond.
